National Napping Monthzzzzzzzzzzzzzzz

Ok, I love that it's napping month as I am a huge fan of the little middle-of-the-day naps. Now that my kids are older, it's easier to fit in, although frankly, I could've used more naps when they were little!

I'll try to stay awake long enough to post today. :) I thought I'd post some recipes that I've tried from pinterest and facebook with the results, just for fun.



Chicken Flautas...yum! Although they are deep-fried, they were something different to do with leftover chicken and my picky kid liked them! I used ricotta cheese instead of the queso fresco because it's what I had. Tasty! Here's the recipe from Country Living.



Tortilla Pizza—pretty good! If you want to use whole wheat tortillas or low carb tortillas, you can make this pretty healthy. Mine wasn't as pretty as this, but it was good. Just don't expect deep dish pizza. Here's the recipe.



Roasted Parmesan Green Beans—yum! I have made these a few times. Love them! Here's the recipe.



One Pot Pasta—yum! I found this on facebook, and just tried it. I didn't have a lot of fresh stuff (garlic or herbs) but I used dried and an heirloom tomato and it was dandy. I also did a half-recipe and might've been a little light on the noodles. Mine was more like soup, although I really like soup, so it was tasty! I'll make it again. You could also throw in some cooked chicken to warm up toward the end of cooking to make it heartier. Here's the recipe.
